Here in Puglia in the upper Salento on the border between the municipalities of Monopoli and Fasano, in an area known as Egnazia (an ancient Roman city whose remains can still be admired) our family company cultivates a Perino Tomato whose seed it has been passed down for generations and cannot be found on the market. 300 meters from the sea, between dry stone walls and centuries-old olive trees, thanks to the brackish water used for irrigation and the sunny and ventilated climate, this tomato achieves a unique flavor and a superior pulp consistency.
The tomato chosen for the homemade puree made by our grandparents and local families has always been rigorously hand-picked, now we thought we would make it known to the whole world. Transformed into Passata with an artisanal method and with only two ingredients: Egnazia Tomato and salt, nothing else is needed.
