TOPPED CHICORY

Normally the shape and size of the plants is very variable due to the "population" effect which gives each individual clump variable phenotypic characteristics. The local variety called "Galatina" has a more or less wide base with a homogeneous height since the shoots are inserted at the base of the head on the same plane and the head has few leaves in the shoots, while the "Molfetta" has a more contained base with shoots tend to be elongated with a scalar height and a pyramidal arrangement, a head with abundant presence of small leaves between the shoots. For both varieties grown by us, the average weight of the plant is between 350 and 600 g.

The topping is represented by a series of local varieties typical of Puglia whose diffusion can be attributed to different regional areas which have given it names such as white catalogna of Tricase, of Brindisi, of Galatina and Molfetta.

Chicory also promotes the functioning of the gallbladder and kidneys and stimulates digestion. Compresses made with chicory decoction help soothe skin irritations. Finally, chicory is considered a real panacea for acne.
